Roastability Due to their higher unsaturated oil content, Iranian pistachios have the capacity to be roasted at between 160 to 180°C (hot air stream temperature). Good roasting brings out the unique flavor of the nut, while eliminating any live bacteria from the roasted product. It is obvious that lower roasting temperatures of around 120°C recommended by some suppliers will not achieve the two above benefits.

ALMOND

IRAN: More than 160,000 tons of sweet almond valued at close to $1 billion are produced in Iran every
Some 160,000 tons of sweet almond valued at near to $1 billion are produced in Iran every year, of which 4,000 to 5,000 tons worth $25 million are exported to 26 countries, including Turkey, India, Germany and the littoral states of the Persian Gulf, according to Ramezan Rouintan with the Ministry of Agriculture.

The official added that per capita almond production in Iran stands at 2 kilograms per year, whereas the global figure is in the neighborhood of 400 grams, Mehr News Agency reported.
In Iran, more than 160,000 hectares of orchards are under almond cultivation. The main producers of the nut include Fars, Chaharmahal-Bakhtiari, Khorasan Razavi, Hamedan, Markazi, East and West Azarbaijan, South Khorasan, Yazd, Kermanshah, Qazvin and Lorestan provinces. IRAN: Iran is the fourth major fig producer in the world.
An official with Iran’s Agriculture Ministry said that Iran is the fourth major fig producer in the world. The General Director of Tropical and Subtropical Fruits Department of Agriculture Ministry, Masoud Latifian, said that Iran is producing some 80,000 tons of figs per annum and ranks fourth in world’s fig production.

He went on to say that Turkey, annually producing some 255,000 tons of fig, ranks first in this regard, adding that totally some 1 million tons of this fruit is harvest per year across the globe.
As reported by World Atlas website , Egypt and Morocco are the second and third big producers of fig while Algeria, Greece, Syria, the US and Spain stand below Iran in this ranking(Quoted from Mehr news 16 June 2019)

RAISIN

IRAN: Zanjan a leading province in Rain for raisin production
The raisin exports from Zanjan province witnessed 133 percent growth in the first 10 months of the current Iranian calendar year
During the said period (10 months), 3,700 tons raisins have been exported to Turkey, Russia, Germany and the Netherlands, Head of Zanjan Agricultural Jihad Office Hossein Jafari told the Islamic Republic News Agency (IRNA) on Saturday. The exported products were valued 5 million dollar, he said. Zanjan is the capital of Zanjan Province in Iran’s Azarbaijan. It is located 298 km north-west of Tehran on the main highway to Tabriz and Turkey and approximately 125 km from the Caspian Sea. (Quoted from Mehrnews 16 June 2019)

IRAN: Iran Date Exports Earn $300m Since March
Around 350,000 tons of dates worth $300 million have been exported from Iran since the beginning of the current Iranian year .“We expect the figure to rise to 400,000 tons by the [current fiscal] year],” Ebrahim Pourheydari, the deputy head of the National Association of Iranian Dates, was quoted as saying by IRNA on Tuesday.

“Russia, India, Canada, East Asia and some European countries are our main export destinations,” he added. According to Eskandar Zand, an advisor to the agriculture minister, date production in Iran has increased by 18% in the last 10 years while the average global increase over the same period has been 10%. IRAN: Iran exports Saffron to forty-seven countries in the world
Eighty percent of Saffron produced in Iran is being exported to 47 countries in the world, Chairman of the Union of Exporters and Sellers in Khorasan, in northeast of Iran has said. Currently Iran tops the list with the high quality production of 472,097 metric tons. News of June 2019

Iran Press/Iran news: “92 percent of the saffron in the world is produced in Iran and the country has 400 tons of saffron production a year,” Deputy Chairman of the Saffron National Council, Gholamreza Miri stated in an exclusive interview with Iran Press correspondent on Tuesday. Talking in Mashhad, northeast Iran on Tuesday, Deputy Chairman of the Saffron National Council, talked of Iran’s unrivalled position in the world and said:

“There are some countries that support Afghanistan’s saffron export among them are Italy, Germany, Netherlands and Spain, in an effort to break the monopoly of saffron production in Iran.” Miri also announced the 500-million-dollar revenue from the saffron and stated:
